Ingredients:
Cooked Fire Grain Freekeh - 2 cups
Olive oil - 1/3 cup
Spinach - 200-250g
Garlic cloves - 5 thin sliced
A pinch of salt
Cracked black pepper
Squeezed lemon - 1
Instructions:
First cook the Freekeh according to the instructions on the package.
After cooling, start with washing the spinach (no need to dry).
In a wide saucepan, heat oil, add garlic.
Simmer slightly the garlic, and add the spinach (with the stalks).
Steam while saucepan is covered for a few minutes, until the spinach softened and brews. Add Freekeh, cover the pot and cook for 5-7 minutes.
Uncover the pot, stir, taste and season with salt and pepper according to your taste.
Pour into a plate, generously squeeze lemon on top and serve.
Suggestion for topping: use crème fraîche and freshly ground black pepper.
